Tonight’s dinner….

Made some great dishes tonight that I wanted to share with you…

Swiss Chard with Bacon, Apples & Onions

* I got the base of the recipe for a Cooking Light recipe by Judy Lockhart.

Ingredients:

1 bag of swiss chard with stems (chopped or cut with cooking scissors)

4 slices of bacon (cut into small pieces)

1 & 1/4 cups of white onion (thinly sliced)

1 & 1/2 cups of tart green apples like granny smith (chopped in cubes)

1/3 cup of water

1 tablespoon of apple cider vinegar

1/2 tablespoon of champaigne vinegar

1 cinnamon stick

1/4 teaspoon of pepper

1/2 teaspoon of salt

Directions:

  1. Spray pan with cooking spray.
  2. Heat pan at medium until hot.
  3. Fry bacon in pan until crisp.
  4. Remove pan from heat while removing bacon to a ceramic bowl.
  5. Leave drippings in pan.
  6. Restore heat to pan.
  7. Add onions to pan. Cook until tender.
  8. Add swiss chard & champaigne vinegar. Cook for about 5 minutes.
  9. Add water, apple cider vinegar, and cinnamon stick.
  10. Cover and cook on medium heat for ten minutes.
  11. Uncover and add apples, salt, and pepper untill apples are tender. (Leave the lid on for more aromatic flavor to the apples.)
  12. Reduce heat to low-medium and add bacon until semi-soft. 
  13. Remove cinnamon stick and serve.

We ate this which some Caribbean spiced chicken.

Then I made a cocktail smoothie which was spectacular that I am calling…

Poor Girly Drink 

Ingredients:

1 shot of vodka

1 banana

12 oz of Zero Calorie Fruit Punch Powerade

1 oz of skim milk

Ice


Blend it all together. Put as little or as much vodka as you like. DELICIOUS!
